Signature Medium · Central America · Africa · $25.00

Tasting notes: Dark Cherry, Cocoa, Candied Citrus, Truffle Finish.

The standard issue. Built for the long brief — clarity in the cup, weight in the finish.

Most people come to espresso through dark roasts. Heavy body, bitter finish, the kind of cup that needs milk and sugar to be approachable. That's not what The Apex is, and that's the point.

The Apex is a medium roast blend built around two origins that do opposing things well. The African beans bring a brightness to the cup you don't expect — a dark berry finish, hints of candied citrus, a touch of forward acidity that sits closer to a fine wine than a traditional shot. The Central American beans ground it. They add a creamy, truffle-like sweetness and earthiness that balances the brightness and keeps the cup from running away from itself.

The result is something richer and more layered than you'd expect — dark cherry, a whisper of cocoa, fruit-forward but grounded. It doesn't taste like coffee is supposed to taste, and once you've had it brewed correctly, you won't be able to go back to what you thought coffee was.
